Games that use dice and the dice themselves goes back to the Middle Eastern Crusades, but current craps is approximately one hundred years old. Current craps formed from the 12th Century Anglo game called Hazard. Nobody knows for sure the beginnings of the game, although Hazard is said to have been discovered by the Anglo, Sir William of Tyre, around the twelfth century. It’s presumed that Sir William’s horsemen bet on Hazard amid a siege on the castle Hazarth in 1125 AD. The name Hazard was derived from the fortification’s name.

Early French colonists brought the game Hazard to Acadia. In the 18th century, when displaced by the British, the French headed south and found sanctuary in the south of Louisiana where they after a while became known as Cajuns. When they were driven out of Acadia, they brought their preferred game, Hazard, with them. The Cajuns streamlined the game and made it fair mathematically.
